In the far reaches of the Arctic Circle, the sun never sets in the heat of Midsommar it merely does a lazy dance across the sky resulting in a twilight mixed with dawn before rising once again. Under this magical sun, the Fae dance all night long while the "hidden folk" get up to mischief. 

Our tea, Under the Midnight Sun, reflects the glittering festivities of summer in full bloom. We combined Strawberry, Lemon Balm, Honeybush, Birch Bark, Sumac and other herbs to create a tea full of the bounty of early summer. Many of the herbs, roots and flowers in this tea are plants grown in Scandinavia in the summer---the Birch Bark from the Birch trees that are tapped in late spring for sap, the wild strawberries that are wild harvested across the land and the Sumac which makes delicious, tart lemonade. These flavours hearken back to my own childhood in rural Pennsylvania where I would wildcraft with my grandfather and learned to live off the bounty of the land. I combined them to create a tea that breathes summer vibes while retaining its herbal nature so you can drink it any time of day.

This tea is best served with honey and you can grab local, infused honey in Lubbock, Texas from The Creaky Cauldron Herbary to use in your brew. Serve it hot with honey or add the honey before its put over ice for a delicious, refreshing, summer beverage that will transport you to the land of Ice and Fire to dance with the Fae under the midnight sun.
